The menu features premium Neapolitan pizzas, signature pastas and premium entrees.

Edera’s cuisine – featuring sauces, pastas and baked goods made fresh daily in the restaurant – are elevated enough for a special night out, while also being approachable enough for everyday fare.

Executive Chef

From a young age, Chef Andrew Simon found joy in the kitchen—certain flavors and aromas still bring back vivid memories of his childhood. He pursued his calling by enrolling at L’Ecole Culinaire.

Chef Andrew honed his skills in several kitchens across the region before becoming Executive Chef at Scape American Bistro. He opened his own casual dining concept, Charred Crust.

Today, Chef Andrew brings his deep-rooted love for food and hospitality to Edera Italian Eatery, where he leads the kitchen with creativity, care, and craftsmanship. He is a firm believer in house-made everything, sourcing local ingredients whenever possible, and creating dishes that not only taste incredible but also spark memorable moments for every guest.

Chef Andrew’s culinary style honors tradition while elevating the familiar. His approach is simple: respect the classics, enhance them with refined technique, and always cook with heart.

Larry Joiner
Restaurant Manager

Larry Joiner, a tenured member of the Edera Italian Eats Family, has been with the restaurant since the doors opened in 2020. With a degree in business management, Larry has ventured from opening businesses of his own, freelancing in the realm of health and fitness, to entering the world of restaurants. While taking time away from his ventures, Larry was slowly led to his current role, finding enjoyment in the Saint Louis restaurant and food scene, in his own CWE neighborhood. His 20-plus years in direct customer relations, coupled with his experience in leadership roles, made him the perfect fit to oversee the day-to-day bustle of Edera.
